Mother's Day is just around the corner, so why not start planning something special to do for mum this year? 
 
These delicious snack balls, or 'Love Bites' as I have called them, are made with dates, almond meal, homemade chocolate, and other delicious and nutritious ingredients. These will be the perfect treat to spoil mum. 
 
These Love Bites are not only incredibly tasty, but they are also gluten, dairy and processed sugar-free, as well as great for vegans and vegetarians. Just for mum because she deserves all the best. 
 
 
This recipe has two parts to it.  Firstly the making of the love bites secondly the making of the raw cacao (chocolate) sauce.
 
Ingredients for the Love Bites
1 and a half cup of almond meal
1/2 cup unsweetened desiccated coconut
1/4 cup of virgin coconut oil
1 and a half cup of pitted dates
1/4 cup of almond butter
2 tablespoons of unsweetened almond milk 
1 tsp of vanilla extract original 
 
Method:
·       Place all the above ingredients in a clean food processor. Blend until well combined and a uniform mixture is formed. 
·       Transfer the mixture to a medium size bowl, take a small amount to a size of a golf ball and mould with the palm of your hands, until a nice uniform ball is formed. 
·       Place the Love Bite unto a platter and continue forming the balls until the mixture is finished. You may pile them or scatter them unto a platter, it’s your choice. 
·       Set aside. 
 
To make the Raw cacao sauce (chocolate sauce)
 
Ingredients:
1/3 cup of cacao powder(this is the raw form of chocolate powder unsweetened and unprocessed full of nutrients) 
1/4 cup of virgin coconut oil (melted)
1 tsp of vanilla extract original 
2 tablespoons of 100 percent maple syrup 
 
Method:
·       Place the coconut oil into a Pyrex bowl and melt it, either on the stove top or 30 seconds in the microwave. 
·       Once the oil has melted add the cacao powder, vanilla extract and the maple syrup. 
·       Use a whisk and whisk until combined and no lumps present. 
·       Let the mixture cool slightly. 
 
To Assemble:
Bring the platter of the Love bites and pour the cacao mixture on the top of the love bites unevenly. Decorate with raw cacao nibs, dried rose buds, petals and fresh flowers.  Place a love heart made out of colourful craft paper (I used red craft paper) on top of the love bites. Serve. 
 
These bites can be made ahead of time will store in the fridge for 4 weeks in a Pyrex container. 
 
The above recipe yields about 10 to 12 love bites.
